Celebrating Ryan & Halee at Chief Hosa Lodge

Colorado weddings have a way of keeping you on your toes—and Ryan and Halee Abbott’s celebration at the beautiful Chief Hosa Lodge was no exception.

When we arrived to set up, the rain was coming down. But one thing we’ve learned at The Allyn Bar Co. is that great hospitality requires a little adaptability. We adjusted our setup, got the bar ready, and when it was time to start serving, we were ready to go right on time.

And from there, the night took off.

A Drink Menu That Told Their Story

One of our favorite parts of planning a wedding bar is creating a menu that feels personal to the couple. For Ryan and Halee, each selection had a little story behind it.

The surprise winner of the night? The Cape Cod.

Made simply with Tito’s Vodka, cranberry and fresh lime, it was Halee’s drink of choice—and apparently the guests agreed. It became so popular that we actually had to make a run for another bottle of Tito’s before the night was over. When the bride’s favorite drink starts disappearing that quickly, you know you picked a good one.

The Hugo Spritz brought an especially personal touch to the menu. Made with elderflower, Prosecco, soda, lemon and fresh mint, the cocktail was included as an homage to Ryan and Halee’s son, Hugo. It turned out to be another huge favorite with guests.

And because of the couple’s Colorado State University roots, we couldn’t leave out Old Aggie. The Colorado beer gave a perfect nod to their CSU connection—and plenty of guests were happy to raise one to the newlyweds.

We rounded out the menu with a classic Lemon Drop, giving guests something bright, citrusy and refreshing.

Free Pouring & A Little Creativity

This wedding was also a free-pour event, rather than one where our cocktails were pre-batched from our Piaggio Ape Truck.

That gave us a chance to do something we love behind the bar: interact with guests and play with the drinks a little.

Want your Cape Cod a little more tart? Done. Prefer your Hugo Spritz lighter and extra bubbly? We can do that. Want to adjust the sweetness of your Lemon Drop? Absolutely.

Having the ingredients at the bar allowed us to make small variations based on what each guest enjoyed while keeping the heart of Ryan and Halee’s curated menu intact.

To us, that’s part of hospitality. A great bar experience isn’t just about making the same drink over and over—it’s about paying attention to the person standing in front of you.


More Than Just the Bar

Of course, drinks were only one part of a pretty fantastic celebration.

Woodie’s Pizza kept everyone fueled, Ben & Jerry’s brought the perfect sweet finish, and Courtney with Wild West Photo Booth helped capture some of the moments that Ryan, Halee, their family and friends will get to look back on long after the last drink was poured.

There’s something we love about working alongside other vendors who understand that each of us contributes one piece to a much bigger experience.

Rain or Shine, We Bring the Bar

The Abbott wedding was a great reminder of why we built The Allyn Bar Co. the way we did.

Events change. Colorado weather definitely changes. Drinks run out. Guests surprise you with what they love.

Our job is to plan for what we can, adapt to what we can’t, and make sure our clients never have to worry about what’s happening behind the bar.

Ryan and Halee got to celebrate.

Their guests got to eat, drink, laugh and raise a glass.

And we got to be a small part of a really special Colorado wedding.
