Crafting Community One Cocktail at a Time
Elevating Cocktail Classes in Sunnyside
There is something powerful about gathering with intention. Not just to drink — but to connect, to learn, and to share an experience. That’s exactly what we created at our most recent Sunnyside Sipper cocktail class in Sunnyside, Denver.
Hosted at the beautifully designed Birch Road Social Club, the evening was more than a mixology lesson. It was a curated social experience built around three essential ingredients:
Start with the best spirits.
Choose the right setting.
Invite exceptional people.
When those align, magic happens.
Starting with the Right Foundation

We featured the Gold Rush — a modern classic built on bourbon, fresh lemon juice, and honey syrup. It’s simple, balanced, and elegant. A cocktail that rewards quality ingredients.
For this class, we used bourbon from Denver Distillery, one of our proud partners in The Allyn Bar Co.’s Local Crafters Program. Supporting local makers isn’t a marketing line for us — it’s a business model. When we pour local, we strengthen the ecosystem that makes Denver’s hospitality scene special.
Guests learned:
The correct bourbon-to-acid-to-sweet ratio
Why fresh lemon juice matters
How to properly emulsify honey syrup
The mechanics and rhythm of shaking a tin with confidence and style
There’s an art to shaking. It’s not timid. It’s intentional. Controlled enthusiasm with purpose. When everyone in the room finds that rhythm at once, you can feel the energy shift.

A Thoughtful Opening (Beyond an Ice Breaker)
Instead of a traditional icebreaker, we opened the evening with a guided social introduction, a structured way to get guests talking beyond surface-level small talk. In a private club setting like Birch Road, this immediately elevated the room.
By the time the first tin hit the ice, strangers were already collaborators.
The Setting Matters
Birch Road Social Club was the perfect host venue — intimate, polished, and designed for connection. A cocktail class isn’t just about instruction. The acoustics, lighting, layout, and flow all influence how comfortable guests feel engaging.
Location shapes experience.
The Final Ingredient: The Guests
You can source the best bourbon.
You can select the ideal venue.
But the defining factor is always the people in the room.
Our Sunnyside community showed up curious, engaged, and ready to learn. We walked through the build, demonstrated technique, answered questions, and then — together — raised our glasses in a collective cheers.
That final toast is always my favorite moment.
It’s not about the drink anymore.
It’s about the shared experience.
Why We Host Cocktail Classes
At The Allyn Bar Co., we believe a great bar experience does three things:
Teaches something tangible
Elevates quality ingredients
Builds real community
The Sunnyside Sipper delivered on all three.
If you’re a business, social club, or private host looking to create a curated cocktail class experience — whether it’s bourbon-focused, tequila-driven, or entirely spirit-free with elevated mocktails — we’d love to design it with you.
Because the best nights don’t just serve drinks. They serve a connection.
Cheers,
Joey Shearer, Founder
